Salmon with Pepita Lime Butter and Prosciutto-Wrapped Asparagus

Tonight's dinner was my most favorite yet, but it's probably just because we had so much variety (and truth be told a bit more than 500 calories but I'd planned ahead and ate less to account for that). The salad was a mix of Spinach & Arugula. The rice was short grain Whole Wheat rice -- plain but tasty. This time I made the dressing according to the recipe and it is now my favorite salad dressing. It looked like caramel mixed with chocolate and tasted just as good as dressing can taste. (I wanted to eat a loaf of bread and dip it in there, but I resisted.)
