Beef & Bean Chile Verde

Dan made Beef & Bean Chile Verde for dinner tonight! (All I did was peel the garlic for him.) He did a great job. This is a really fast and easy dish.

Beef & Bean Chile Verde

Here's the finished Beef & Bean Chile Verde topped with a little bit of shredded Jack cheese and some diced green onions. This was really filling. I couldn't even eat a full cup and the serving size was 1 1/2 cups. That's okay though, it means more left over for lunches.

The recipe only calls for beef, but we didn't have a pound handy. We had 1/2 lb. beef and 1/2 lb. turkey in the freezer left over from the first time we made Mini-Meatloaf. This was the perfect opportunity to use that up. Using turkey made it more lean too, so bonus!
