EatingWell's Tortellini Salad with Leaf Lettuce Salad and Garlic-Dijon Vinaigrette

Tortellini Salad has been a favorite since the first time we tried it so it was any easy choice to make when deciding what to make for dinner tonight. We had friends Lori, Perry, and their daughter Maddi over for dinner. Lori is not only a friend, but she's going to be our wedding photographer! We're so excited to have her capture our day on film digitally. Oh yea, the food...

Tortellini Salad (no meat)

Perry is a vegetarian so we left out the prosciutto and had it on the side for the meat eaters. We made a double portion of Tortellini salad and this is how much was left over. We have enough for 4 lunches and 3 dinners.

Salad with Garlic-Dijon Vinaigrette

We also had salad with Garlic-Dijon Vinaigrette dressing by EatingWell. Wow; this is one flavorful dressing! There's quite a kick with the lemon, garlic, vinegar and mustard. I've been known to like a little salad with my dressing, which adds up to a lot of calories. A little dressing goes a long way in this case and allows me to better manage my calories. I'm going to enjoy the dressing with salad for my lunches the next few days.

We finished the night with some chocolate covered strawberries (not shown) and a few fresh raspberries. Tomorrow I may add some of the remaining berries to my salad to offset the tang from the dressing.
