Ginger Pineapple Chicken Rice Bowl
February 12, 2011
It was starting to get late and I hadn't made any dinner plans yet so we decided to pick up some chicken breasts to put into a salad. By the time we got home, I didn't really want salad. I wanted something warm and salty/sweet.
For months The Ginger People's Ginger Syrup has sat in our fridge waiting to be tasted. (Yes, another one of our try-something-new purchases from Whole Foods.) Dan's a big fan of ginger flavor but I'm not and I think that's why I waited so long to try to cook with it.
I chopped up the chicken and seared it in a little olive oil with some garlic powder. While that cooked, I microwaved some Jasmine rice. Once the chicken was mostly cooked, I poured in some soy sauce and ginger syrup. I cooked that a bit while I rummaged through my pantry for some pineapple chunks.
I tossed in the pineapple and rice and cooked it for a couple minutes to let the flavors blend together a little bit. The rice seemed good and sticky so I thought I'd have a little fun and use a bowl to shape the Ginger Pineapple Chicken Rice Bowl rather than just dump it on the plate.
I didn't measure anything, so no recipe to post, sorry! I'll try to make it again and measure things out next time. No promises...
