Herb-Coated Center-Cut Tenderloin served with Scalloped Sweet Potatoes

Herb-Coated Center-Cut Tenderloin

We took a short trip to WholeFoods this afternoon and picked up some Center-Cut Tenderloin, for just $4.99 a piece. We decided to use the Herb-Coated Filet Mignon recipe by EatingWell. I had purchased 3 big huge gigantic GINORMOUS sweet potatoes a few days ago and decided I should probably use at least one of them tonight. Rather than make Oven Sweet Potato Fries, I decided to come up with a side dish of my own this time.

Scalloped Sweet Potatoes

Unlike traditional scalloped potatoes, Scalloped Sweet Potatoes are not packed full of butter, cheese, and cream. Nonetheless, they're tasty and have a similar consistency and are sweeter of course. The creamy sauce is made with a little bit of reduced-fat cream cheese, some honey, a few tablespoons of milk and a touch of butter.

We enjoyed the Herb-Coated Filet Mignon and Herbed Whole Wheat Couscous (not shown) so much the night prior, that we had to have it again.
