1. My Eating Well 1 Year Anniversary

On the 7th of February, 2010 I declared, "I'm not on a diet; I'm Eating Well!" The very next day, I began my journey. That was exactly one year ago.

I thought about trying to eat the same meals for 90 days as I did last year, but that'd be absolutely crazy. Instead I'm going to do something that's just as crazy but doesn't take 90 days worth of effort. I'm going to share with you photos I've never shared online.

2. Gnocchi with Parmesan Cheese Sauce

I wasn't planning to share tonight's dinner at all because I didn't think it was going to be anything all that special. Oh... my... goodness.... YUM!!!

We had 32 pieces of leftover gnocchi from last night. I was concerned because the uncooked gnocchi got a bit darker in color. I then looked at the packaged whole wheat gnocchi in my pantry and decided they looked so similar it was probably fine to go ahead and cook them. After all, the recipe said I could refrigerate them for a couple days.

3. Homemade Whole Wheat Gnocchi

I've finally done it! For years I've wanted to learn how to make gnocchi and have put off trying to make it without being taught by someone who really knows how. I kept reading you need a gentle hand and I was nervous that I'd really mess it up. I used EatingWell's recipe for Homemade Potato Gnocchi, but chose to use Whole Wheat flour instead of all purpose flour.

4. Coffee Braised Pot Roast with Caramelized Onions and Spinach Salad with Maple Balsamic Vinaigrette

Last night Dan prepped a chuck roast and closely followed EatingWell's recipe for Coffee Braised Pot Roast with Caramelized Onions. He did a great job; the only thing I did was brew the "strong coffee", which was as simple as microwaving some water and adding instant decaf. He followed the modified directions at the end of the recipe for using a crock pot to the letter. I was so proud. We set the croc kpot on low since it would be cooking more than 8 hours.

5. Herb-Coated Top Sirloin with Brocolli and Rice

The meat we bought was used to make EatingWell's Herb-Coated Fillet Mignon, only we used center-cut sirloin instead. We actually prefer the sirloin to the fillet mignon for this recipe. It turned out really tender and if I didn't know any better, I'd think it was fillet mignon anyhow.

6. I'm in EatingWell Magazine (August 2010)!

By the way, there's a misprint in the article. It only took 12 weeks to lose 14 pounds, not 16 weeks. (90 days is 12 weeks.) Since the article, I've lost another 8 pounds!

8. EatingWell's Tortellini Salad with Leaf Lettuce Salad and Garlic-Dijon Vinaigrette

We made Tortellini Salad and also had salad with Garlic-Dijon Vinaigrette dressing by EatingWell. Wow; this is one flavorful dressing! There's quite a kick with the lemon, garlic, vinegar and mustard.
