I'm not on a diet; I'm Eating Well

Starting tomorrow...

Over the next 90 days I'll be on a cooking journey that I'm calling, "I'm not on a diet; I'm Eating Well.". The primary goal is to keep dinners (with or without dessert included) at or under 500 calories. I'm trying to stick to recipes in the EatingWell cookbooks I have, most of which are available online. If I have a link to the recipe, I'll share it. Enjoy!

P.S. I usually use 1/4 or 1/2 the salt a recipe calls for. All photos taken in these 90 days will be taken with my iPhone, so sorry if they're not the greatest. I'm a terrible photographer; not the iPhone's fault!
