Mini Chocolate Chip Cakes for Dessert!

As a reward for enduring 2 nights of dry pot roast (though very tasty despite its dryness), tonight I made the three of us some Mini Chocolate Chip Cakes.
They sort of look like fluffy choclate chip cookies. These are tasty little cakes that you can make in about 5 minutes start to finish. I came up with the recipe on my own one day when I was craving chocolate cake.
Actually, I really wanted to make a brownie that day and failed at it rather miserably. It turned out bitter, lacking sugar. So I decided my second attempt would be chocolate chip cake. It turned out pretty good, but as the saying goes, third time is the charm!
I was really happy with how this turned out and plan to tweak the recipe a little bit next time, but it is good enough to put in the recipes section as it is now. If you've got pancake mix, baking powder, vanilla (powder or extract), powder sugar, mini chocolate chips and water, then you can follow my Mini Chocolate Chip Cakes recipe and have your own in 5 minutes or less.
I'm sure I'll perfect a mini brownie recipe soon enough and when I do, I'll be sure to blog all about it!
