Organic Whole Wheat Blueberry Pancakes

Gaeatno loves pancakes, and I try to make them about every other weekend or so. Unfortunately, pancakes are not exactly healthy, so I set out to make a recipe that was just a little bit healthier than our usual batch by going all organic and including blueberries.

I expanded upon the recipe I found on the side of the Organic Buttermilk Pancake & Waffle Mix (which is another of my try-something-new purchases from Whole Foods). First, I made a batch 1/2 of the recipe without any egg (which was optional), instead of 1 1/2 tablespoons of oil (not shown in my picture) I used 4 teaspoons which is just 1/2 a teaspoon less than what their recipe calls for. To me-ify the recipe I added 2 teaspoons of vanilla extract and a pint of blueuberries.

Because I mixed in the blueberries, the pancakes didn't pour out as even circles. Maybe next time I'll drop the blueberries onto a pancake on the grill instead. Once they bubbled, I flipped 'em over without any trouble.

It made 6 pancakes about 5 inches each. Each of us had 2 pancakes, which was plenty. I measured out 2 teaspoons of warmed maple syrup to top my pancakes. In all, I think it was about 550 calories. The recipe and my photography needs a bit of work before I'd post it in the recipes section though.
