Pecan-Crusted Chicken

I've been wanting to make Pecan-Crusted Chicken since week 2. Here I am at day 80 and I've finally made it! I don't know why, but something made me feel like this recipe was going to be difficult or time consuming. It was neither!

The chipotle gives a nice kick, but if you don't like heat just reduce it to 1/8 teaspoon.

I confess; I thought I had pecans in the freezer already chopped up. When I went to use 'em I discovered they were candied pecans. Whoops! I used 'em anyhow. I'll be trying it again with regular pecans though and I'm sure it will be just as yummy.

Asparagus with Curry Butter

Asparagus with Curry Butter was suggested today by EatingWell on Facebook. I've been smelling my new curry plant and wanting to make something curry, so this was perfect timing. Quite delicious; I never knew I liked curry so much.
