Pineapple Carrot Cake with Cream Cheese Frosting

20 slices of Carrot Cake without coconut flakes since several guests don't like 'em. I did add a little coconut cream to give it the flavor since it's a texture thing for those who don't like it. (I made sure to add the equivalent in calories as not to change the calorie outcome.)
The recipe says 16 servings is 342 calories per serving. Since I cut it into 20 each piece was only 274 calories.

Slice of Pineapple Carrot Cake

Baked in a 9x13 pan it came perfectly to the top of the pan with the cream cheese frosting.

I don't normally like pineapple in my carrot cake, but I really liked this recipe a lot and can't wait until I can have another slice. 20 slices, 10 guests, only 3 sent home with one guest. Guess how many pieces I've got left. They're all mine... bwhahahahaha!
