Seared Steak with Caramelized Onions & Gorgonzola

For dinner tonight we had Seared Steak with Caramelized Onions & Gorgonzola. We used Center Cut Top Sirloin from Whole Foods. Each piece was 8oz. (for only $4.99!) so we split 2 pieces in half to make the 4 servings.

It was tender, juicy and tasty. The combination of the sweet onions and salty Gorgonzola truly complimented the flavor of the meat.

Our problem : were're so in the sticks we'd have to travel 30-60 miles to find a store that even stock gorgonzola ! & fish ? it's catfish and fried " only "... but Becky & I are great cooks so,,, we make the drive... (+_+)

Bill, you just have to pick up the fancy ingredients when you visit Austin next time. :-) Seriously though, this recipe would be good with Bleu Cheese as a substitute or even without any cheese at all.
