Spice-crusted Chicken Breast & Oven Sweet Potato Fries

Spice-crusted Chicken and Oven Sweet Potato Fries

Tonight it was a simple dinner, but a really flavorful one - and *very* low calorie too: Spice-crusted Chicken Breast served with Oven Sweet Potato Fries. (We used tenders instead of breasts.) That's all spice; no bread crumbs. The tiny bit of cayenne pepper gives the fries a very mild kick. Definitely a good paring of dish & side this time.

All that peeling and slicing of potatoes and then grinding the pepper for the chicken almost felt like a mini-workout!

OMG....I have only had sweet potato fries, like, twice and LOVED them! Tasty goodness.

I'm a big fan of sweet potato fries. You probably had them deep fried right? These were just as tasty baked and far fewer calories. (I'd never bother to fry them anyway; can't stand the mess and dealing with disposing the oil.)

Had them in restaurant, but I will try to make them at home. You got me motivated. What are you, like, a size 4 anyway? You are toooo funny! But I need to get out of the comfort zone and try more foods to cook. I like reading of your cooking adventures.

I haven't been a size 4 since Freshman year! ;-) I was barely fitting in a size 16 last year. Refusing to buy new clothes, I decided I'd better start losing weight. I'm able to squeeze in an 8 now! I want to be a comfy size 6. ~15 lbs. more to go and I'll be there by summers end at worst.

That's like me...even in high school, when everyone thought I was Miss Twiggy, I was a size 6. Looks can be deceiving! Awesome about your Healthy Attitude and lifestyle. And believe me, sizes look so different on everyone. It really is just a number. I would LOVE to lose a few, too. My vices are the treats and the so tasty dinners with the loaded calories. I have been trying to be more careful.

P.S. When is the wedding date? I can't wait to see pictures of all the happenings!!!

Yeah, you're right about sizes. It's less about pounds for me and more about my overall shape. I'm rather pear-shaped and short, so it is not easy to get a slim look.

As for treats, have 'em. Just eat less of them and eat 'em really slow. Enjoy each bite longer.

No wedding date set yet. I'm not even sure if I fit in my dress; I still have to try it on. Waiting to reach my one-year goal first. I'll know soon!
