Spinach & Cheese Stuffed Manicotti

Day 5 & 6 dinner was Spinach & Cheese Stuffed Manicotti. We were supposed to use Jumbo Shells, but the store was out so this was the next best thing. 4 shell's stuffing amounts to 2 and 3/4 Manicotti, so we opted to eat only 2 Manicotti due to the extra pasta.

In the photo, there's one whole Manicotti, with one cut in half to try and show the inside. My photography doesn't do it justice at all.

There were lots left over so we got a break from cooking and had it for Day 6. We still have more for to share for lunch tomorrow! I think it made about 18 Manicotti and we only used 1/2 the spinach the recipe calls for. We also used grated Parmesan, so we used about 1/2 the recipe calls for since shredded fills a cup more loosely. Sometimes, you just gotta improvise and be sure you're adjusting for calories/quantity accordingly.
