- 1. Gnocchi with Parmesan Cheese Sauce
-
I wasn't planning to share tonight's dinner at all because I didn't think it was going to be anything all that special. Oh... my... goodness.... YUM!!!
We had 32 pieces of leftover gnocchi from last night. I was concerned because the uncooked gnocchi got a bit darker in color. I then looked at the packaged whole wheat gnocchi in my pantry and decided they looked so similar it was probably fine to go ahead and cook them. After all, the recipe said I could refrigerate them for a couple days.

- 2. A French Night at Melting Pot
-
On the 12th day of Christmas I stuffed myself w/ cheese... 4 fondue forks, 3 course meal... & a creme brulee mar-ti-ni! I'm sure if I tried hard enough I could fill in the days and come up with a full Melting Pot version of the holiday tune. I'm far too sober to attempt that though.

- 8. Garlic-Fried Ravioli and Tomato
-
If you're thinking, "How can fried be healthy?" I can answer that. There's hardly any oil involved and it's olive oil so it's generally healthy. You have to remember that it's okay to have some oil.

Tonight I made Tortellini with Simple Red Sauce. In the few minutes it took to make the pasta, I prepared the sauce. This is one of those in-a-hurry dinners that I can count on to be ready fast and without any fuss.
